5 Cheap and Easy Recipes

I love great food, but I don’t like to spend lots of money or time creating elaborate dishes. These cheap and easy recipes are dishes I make under 20 minutes with minimal cooking. I make my lunches or dinner either the night before or right before work. These are great when you are pinched for time on a hot summer day. 

All of these recipes are used with ingredients from Aldi, my favorite place to shop.  Saving money on food was one of the biggest ways I was able to pay off my student loans!

Strawberry Chicken Salad Recipe

Ingredients: 

  • Spinach lettuce 
  • 1 cup sliced strawberries
  • 1/2 cup sliced cucumber
  • 1 -2 oz. sliced grilled chicken 
  • Sprinkle of chopped red onion (optional)
  • 1-2 TBS raspberry vinaigrette

Notes: This serving size is for 1 person and can be changed to your liking!

Spicy Salami Wrap Recipe

Ingredients:

  • 1 Loven Fresh Sun Dried Tomato Wrap
  • 2-3 sliced pepperoncinis
  • 1 TBS chopped red onion (optional) 
  • 1 cup Spinach lettuce
  • 2-4 sliced hard salami
  • 4 slices cut in 1/4” width pepperjack cheese
  • Mustard (optional)

Fold sides of wrap and enjoy!


BBQ Bacon Chicken Salad Recipe

Ingredients:

  • Spinach lettuce
  • 1/2 sliced red bell pepper
  • 1 oz. grilled chicken strips
  • 2 cooked and sliced turkey bacon strips
  • 1/4 medium cucumber slices
  • 2 TBS BBQ sauce

Notes:

Make sure to cook the turkey bacon! I like it a little crunchy so I add a little vegetable oil in the skillet to get the edges a little brown.

Simple Salmon Recipe

Ingredients:

  • 1 Salmon Fillet
  • 1 TBS unsalted butter
  • 1 TSP garlic salt 
  • Pepper to taste
  • 1 cup white rice
  • Sriracha (optional)
  • 1 oz green beans (not pictured)
Simple Salmon

Notes: I get my salmon from Aldi and for a pack of 6, I pay less than $4!

The salmon only needs about 20-25 minutes at about 400 degrees.

I added the butter and garlic sauce to the top while the salmon cooked.

The rice is fairly easy to cook as well. I cook my rice in a rice cooker or if I don’t have as much time, I cook the rice on the stovetop with boiled water for about 20 minutes. I do this once I get my salmon in the oven.

Eggs & BBQ Recipe

Ingredients:

  • 2-3 eggs scrambled
  • 1 oz. sliced grilled chicken breast
  • 2 TBS shredded cheddar cheese
  • Pepper to taste
  • 1 TSP salt
  • 1 TBS Carolina BBQ sauce

This recipe is for breakfast, but who says you can’t enjoy a nice brunch?

    Oh my gosh, finally a list of realistic recipes! Haha, I always find these beautiful lists of dinner ideas on Pinterest or something and have high hopes, but if I have to go to 3 different stores for the ingredients, I’m not doing it. Strawberry salad, no problem 😛
